INGREDIENTS (4 puddings, 4 kids):
300 grams / 10.5 oz of carrots
100g / 3.5 oz cream cheese , Mascarpone or similar type
50 grams / 1.76 oz of grated cream cheese ( Emmenthal , havarti, cheddar etc)
1 tablespoon cornstarch
1 tablespoon chopped fresh parsley
First you have to boil and peel whole carrots in salted water - just enough to cover them - until they are soft and can be crushed easily . Make purée of the carrots using processor, fork or similar.
Beat the eggs with the cream cheese , cornstarch , grated cheese and creamy parsley. We incorporate the mashed carrots. Sal and pepper slightly - carefully , cheese is already salty - and with the obtained paste fill molds to make puddings.
Preheat oven to 150 degrees C / 300 F and custards will be ready in half an hour. Unmold flans and serve hot directly . They will surprise and delight your kids
