Lover' sighs


Last friday was Valentine's Day and here is a very easy and traditional recipe that commemorates the impossible love of Isabel Segura and Diego Marcilla, a legend or maybe real history, it is not known, that occurred in the early thirteenth century in Teruel, east of Spain. Their story resembles to the one of Romeo and Juliet.

These are small cakes filled with a cream cheese that can be baked even using the microwave grill.

INGREDIENTS :

12 tartlets of short pastry (you can buy them already made)
50 grams (1.7 oz) of unsalted butter
50 gramos (1.7 oz) of cottage cheese
50 grams (1.7 oz) of granulated white sugar 
1 egg
Powdered sugar to decorate

In a saucepan over very low heat melt the butter. Once liquid we pour the sugar and with the rods we stir until it dissolves in the butter.

Next we incorporate the cheese until it dissolves. Remember, all with fire to a minimum.

Then add the beaten egg and stir with the rods until the cream thickens. As soon as the cooking bubbles begin to emerge, remove from heat and let cool.

Once the cream is warm we introduce it in a pastry bag or with a spoon we begin to distribute it for each tartlet. Be generous in portions.

Next we are going to bake. It can be done with the conventional oven at 180 degrees celsius (356 F) but using only the gratin for 10 minutes or with the microwave grill if it has a grill, of course.

When the surface has browned, we extract and let cool completely to sprinkle with glass sugar.
