Chicken like in KFC


We have good news if you have often heard that the chicken eaten at KFC is better than yours. We are not going to imitate batter used in KFC, whose composition we do not know, but we can obtain something similar with the assurance that we use 100% natural products.

All the magic of this batter is based on a mixture of spices and a double batter. It is also advisable to fry the chicken in a deep fryer or with plenty of oil, piece by piece. 

It is essential to use chicken pieces with bone and skin. The best are the thighs, wings and breast. If you mix thin pieces with thicker ones, you should watch the cooking of each one to make them. For 4 people we will need 2 thighs, two full wings and 2 breasts with bones cut into two halves, approximately.

INGREDIENTS (4 people):

  • 2 cups of flour (400 ml)
  • 2 eggs
  • 1 tablespoon of salt
  • 1 teaspoon black pepper
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon of sweet paprika (or hot, if you like it that way)
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon dried marjoram
  • 1/2 teaspoon dried sage
  • 1/2 teaspoon dried basil
  • 2 tablespoons of milk
  • Corn, canola, or sunflower oil

In a bowl we mix the flour with all the spices. If you don't have all these spices or you don't want to waste time finding them, the essentials are garlic, onion, salt, black pepper and paprika.

In another bowl we mix the two eggs with the milk. We beat well.

We cover the chicken well with the egg. We immediately take the piece to the bowl with spices and flour and cover it. Once well covered, we dunk it again in the beaten egg and again in the bowl with flour. This is how we achieve double coverage.

We shake off the excess flour and put in the fryer at maximum temperature (usually 190 degrees, 374 F) for about 20 minutes or when the chicken pieces are visibly golden. If you don't have a fryer, fill a saucepan with oil and put it over medium heat. It will be hot enough if when adding a little of the beaten egg mixed with flour it bubbles abundantly.

Take out the chicken pieces, let them drain for a while, first on the rack of the basket and then on absorbent paper. Sprinkle with salt and ready to serve. Surely in the comparison you win to KFC.
