Potato and cheese croquette

 

A very simple recipe that children love.


INGREDIENTS

  • 1 kg (2,2 pounds) of potatoes
  • 200 grams  (7 oz) of mozzarella cheese
  • 100 grams (3.5 oz) of cooked ham in cubes (you can use also prosciutto or similar)
  • 4 eggs
  • Bread crumbs
  • Salt
  • Oil

We peel the potatoes and boil them whole in salted water until we can stick the tip of a knife up to the center of them. We extract and let cool.

We pass the potatoes through the food mill or crumble them, crushing them with a fork and add the grated mozzarella and the ham cubes. 

Add two beaten eggs and knead well so that the mixture is well homogeneous. With half a teaspoon of salt it will be enough to season.

We make the croquettes with the bowl of the hand or with a spoon, passing them through the two remaining beaten eggs and the breadcrumbs. 

We fry them in plenty of hot oil without let them touching and ready to be eaten.

Simply yummy.
