Artichoke gratin

A very simple recipe that is prepared in a jiffy and can be a good side dish or even an entree.

INGREDIENTES (4 people) :

24 artichokes
Chopped parsley
Lemon juice
Extra virgin olive oil

We clean the artichokes by removing the tough outer leaves and stem. Also we cut both end sides to get flat surfaces. Whenever we cut an artichoke we dip leaves with lemon juice to prevent browning .
Once you have all the artichokes cut and ready , we put them in a pot with boiling water and a pinch of salt . We keep them until cooked but without becoming soft at all, just tender.
Once we get artichokes cooked , drain them and split them in half lengthwise . Put them on a tray that can go in the oven with the concave portion touching the base of it. The flat side will be facing up towards the grill . We threw a splash of olive oil, salt, pepper, and then sprinkle a mixture of chopped parsley and breadcrumbs.
We put on the grill at 180 degrees C / 356 F keeping an eye on them and in fifteen minutes will be ready or when golden crust forms on them . These artichokes will be eat up even by those who are more reluctant to vegetables .
