An old recipe that has slowly fallen into oblivion and that is a shame, because it is easy to make and very tasty . Additionally you can do this recipe with frozen cooked lobster , which has a more reasonable price. This recipe is for frozen lobster .
INGREDIENTS (one lobster, depending on its size, serves for one or two people)
1 lobster about 600 grams / 1.3 Lb AND COOKED (frozen or not)
1 medium shallot
1 cup and a half ( 300 ml ) fish broth
3 tablespoons grated Parmesan cheese
2 tablespoons white wine
2 tablespoons of cooking cream
2 tablespoons butter
2 tablespoons chopped fresh parsley
1 tbsp lemon juice
Half a teaspoon of strong French mustard
salt
pepper
Cut the lobster in half lengthwise . All meat from the tail, head and clamps are removed. Chop the meat very fine and put back in the tail and head. Set aside.
We melt butter in a pan and fry shallot finely chopped. When the shallot is fried add the fish stock , white wine and cream. We heat without allowing it to boil and let heat until half the liquid evaporates . When this happens add the mustard, lemon juice , parsley and season .
Preheat oven to 200 degrees C / 470 F . We connect the grill .
We pour the sauce we have obtained over the lobster meat . We put lobster halves in the oven with meat facing the grill . When browned (and NEVER more than 5 minutes ) you must remove and serve immediately.
It is a recipe that has been forgotten but still as spectacular as ever.
