Scallops' carpaccio

An easy and very tasty starter.

Ingredients (4 people):

16 scallops (4 per guest, best if you buy only the meat and it is frozen)
Salt flakes
Freshly ground black pepper
Cayenne pepper
Extra virgin olive oil
1 lime
1 lemon

Let scallops thaw and before they are completely soft, cut into very thin slices

At the same time we make the slices we place them on an individual dish that we have previously painted with olive oil.

Pour over some flake salt, freshly ground black pepper and a pinch of cayenne pepper (or paprika).

Then lightly grate the lime peel and finally dip the scallops with lime juice and lemon.

Cover with plastic wrap and let stand in refrigerator at least two hours.
