We are going to make this meat with the maximum of canned goods. You will see that it is a very quick dish to make and very tasty. Accompanied by some potatoes or cooked rice it makes a complete meal.
INGREDIENTS (4 people)
- 400 grams (14 oz) of pork loin, cut into fillets
- Whole or crushed canned peeled tomatoes, natural (400 grams / 14 oz minimum)
- Canned bell peppers (about 200 grams / 7 oz)
- 1 large (sweet) or fresh red onion
- 2 cloves of garlic
- 1 cup of white or red wine
- Salt
- Black pepper
- Oil
In a large skillet with a couple of tablespoons of oil over medium heat, brown the meat. Add at the same time the finely cut onion (julienned) and the sliced garlic (without the green germ that they have inside). Season with salt and pepper.
When the meat is well browned on both sides and the vegetables quite poached, add the cup of wine and let it cook until more or less half of the liquid evaporates.
Then we add the whole tomato and also crush it with the help of a fork, "roughly". Cut the peppers into strips and add them, stirring well.
We leave to do until everything is well linked and with the level of broth that we like, seasoning towards the end if necessary.
