This is one of those recipes that you make with a pork tenderloin - which is usually or used to be cheap - and a little cheese, you spend very little money and it also has an impressive presentation. What you see does not reach 10 euros / 12 USD and can feed up to 6 people. Not bad to save a Christmas meal.
INGREDIENTS (6 people):
- 1 pork loin of 1 Kg (2.2 lbs)
- Semi-fat cheese in thick slices (Emmental, Cheddar etc)
- Thick sliced ham (optional)
- 1 clove garlic
- Salt
- Black pepper
- Thread for tying meat
One of the great news about this recipe is that it can be made even if you don't have a whole pork tenderloin. All you have to do is buy one of those trays that in the supermarket display slices of what used to be a whole loin. Putting them back together, using the cheese as "glue", we can put the loin back as it was before. In any case, let's go by parts.
First we cut thick slices of cheese (or we put together several thin ones). If we want, we can also add ham or prosciutto ham, to taste.
We make cuts in the loin, as can be seen in the photograph, and the slices of cheese and ham are stuffed into them (if we want to). If we loosen ham, we must sandwich it between two slices of cheese.
Once we have rocked the whole piece of loin, we tie it tightly so that when baking it does not lose shape. We rub the entire piece with the garlic clove and season it.
We heat the oven to 180 degrees (356 F) and put the meat on a tray, if we want with a little water or wine so that the meat does not dry out. 90 minutes should be more than enough. At the same time we can place potatoes and carrots next to the same so that they are baked at the same time.
Before serving, the string is removed and we cut the portions on the table. It will taste like glory when you think about how little it has cost to you.
