Baba ghanoush is an aubergine puree that is very easy to prepare and extremely popular in the Middle East. It is usually consumed with pita bread. I am not very clear if its origin is Lebanese or Syrian, but whichever it is, it is equally delicious.
INGREDIENTS :
- 2 aubergines
- 1 large onion
- Ground cumin (half a teaspoon)
- Ground sesame seeds (a dozen)
- 2 cloves of garlic (without the inner green germ)
- The juice of a lemon
- Extra virgin olive oil (2 tablespoons)
- Salt
We peel the aubergine, cut in slices and soak it in salted water for 2 or 3 hours to release the substance that makes it bitter.
Chop the well drained aubergines together with the onion. We fry both until soft. We take all the ingredients listed and we pass them through the grinder until there is a paste without lumps. Correct of salt (to taste) and ready to serve.
It is also possible to lightly roast the vegetables before frying them - or just roast them - and add a bit of unsweetneed greek yogurt
