Kai Tod, deep fried thai chicken

Kai Tod is a very typical Thai food that is consumed both at home and at street food stalls. These are fried chicken thighs that we have previously marinated and that are usually eaten accompanied by rice and dipped in sweet chili sauce.

INGREDIENTS (4 people) :

  • 2 chicken thighs per person (in this case, 8). Also wings are acceptable.
  • 5 cloves of garlic
  • 1 tablespoon chopped coriander
  • 1 teaspoon white peppercorns
  • 4 tablespoons of Fish Sauce*
  • 1 tablespoon brown sugar
  • Sunflower, corn, or canola oil

* It is a very common sauce in Asian cuisine. It is easily found in oriental grocery stores or large supermarkets.

In a mortar, mash the garlic (without the germ), the coriander and the white peppercorns.

Place the chicken on a tray and add the mashed, incorporating the fish sauce and brown sugar. Cover with plastic wrap and leave to marinate in the refrigerator overnight.

The next day we remove the thighs from the refrigerator and fry them in plenty of oil until they are well fried and crispy.

They are eaten very hot accompanied by rice or some sweet or even spicy sauce.
