Omurice is a very popular omelette in Japan where there are even restaurants specializing in it. It is not considered a traditional Japanese recipe since its appearance is recent (early 20th century) and for the natives it is a type of westernized food.
In a basic way, the omurice consists of an omelette filled with fried rice, seasoned with soy or ketchup. The rice filling is often complemented with vegetables or chicken, so depending on the ingredients we add, we will be in front of a complete recipe that will solve more than one dinner.
The omurice are always served as individual tortillas, although the filling will be made for all of them in the same pan.
INGREDIENTS (to make 4 omurice):
- 8 eggs (2 per person)
- A cup of rice
- 1 chicken breast
- 1 large purple onion (sweet)
- 1 green pepper for frying
- Salt
- Pepper
- Soy sauce or ketchup
- Oil
First we are going to cook the rice in the Japanese way. We will wash the rice under the tap until the water runs completely clear. When this happens we will cook it.
To do this, we add the glass of rice in a volume of slightly salted triple water (that is, 3 cups of water, 600 ml) and let it cook for 10 minutes over medium heat and with the pan covered. After the time we reduce the heat to a minimum and let it cook for 5 minutes.
We remove from the fire and we separate, waiting until the grain absorbs all the water.
In a frying pan we pour a couple of tablespoons of oil and in it we fry the finely chopped onion and the green pepper cut into small pieces. When the transparent onion we add the chicken breast cut into small cubes. As soon as the breast takes color, we add the rice and fry it with the rest of the ingredients for about five minutes, without stopping to stir it. Lightly salt and pepper and add soy sauce or ketchup, to taste. We remove from the heat and cover so that it does not cool.
It is time to make the individual omellets. We beat the two eggs and season them. In a non-stick frying pan, pour a little oil and add the eggs so that they occupy the entire surface. When it begins to set, we place a little of the filling and close the omelette so that it takes the shape of a half moon. It is served immediately and if desired with a little additional ketchup or soy sauce.
As you can see, a simple recipe that can fix us a dinner or even an informal meal.
