A very easy recipe to prepare especially dedicated to lovers of oriental cuisine.
INGREDIENTS (4 people)
- 2 large chicken breasts, boneless
- 1 can of pineapple in its juice or a fresh pineapple
- 1 large purple or fresh onion
- 3 garlic cloves
- Half a cup (100 ml) soy sauce
- Half a cup of coconut milk
- A tablespoon of ground ginger (or fresh grated)
- Extra virgin olive oil
First we are going to marinate the chicken. Cut the breasts into cubes and place them in a bowl with the pineapple slices cut into pieces, the soy sauce and the ginger. We let them rest in this way for at least an hour.
In a frying pan we pour a generous jet of oil and in it we poach the onion cut in julienne and the garlic well chopped without the green germ. When the onion begins to become transparent, add the chicken pieces (without the marinade) and cook them until they are lightly browned on all sides.
When this happens we add the sauce from the marinade (the pineapple chunks, the ginger and the soy sauce) and while stirring we wait until the chicken is done. At that time we add the coconut milk, stir well for a couple of minutes and ready to serve.
You will notice that it does not have salt or pepper since the soy and ginger already constitute enough dressing. It is usually served with fresh bamboo stalks or boiled basmati rice, or with a salad that includes fresh soybeans.
