This soup is very popular in the United States.
INGREDIENTS (4/6 people):
- Half a kilo (2.2 pounds) of broccoli
- Half a liter (5 cups) of milk
- Half a liter (5 cups) of chicken broth
- 100 grams (3.5 oz) of cheddar cheese
- 1 carrot
- 1 celery
- 1 small onion
- 2 level tablespoons white wheat flour
- Salt
- Ground black pepper
- Butter
In a saucepan, pour a couple of spoons of butter over medium heat. We grate the onion and incorporate it. When transparent we add the previously sifted flour so that it does not make lumps and fry it while stirring with the wooden spoon until it takes a toasted color.
When the flour takes color we add the milk little by little while stirring with the rods and then we also add the chicken broth. We bring to a boil and when this happens we lower the heat. By then the liquid will have thickened slightly.
Add the broccoli, celery and carrot - all very chopped except for the broccoli, which is left in small twigs - and simmer for 20 minutes. Shortly before the end of cooking - check first if the vegetables are tender - we add the cheddar cheese so that it melts in the liquid. Season with salt and pepper and ready to serve.
I recommend it, it is really good and also with it we eat broccoli which is very positive for our health.
