Easy pumpkin cookies


Scary cookies...



INGREDIENTS :

100 grams (3.5 oz) of pumpkin
100 grams (3.5 oz) of butter
100 grams (3.5 oz) of sugar
200 grams (7 oz) of white flour of force
Half teaspoon of chemical yeast 
1 pinch of salt



First we cook the squash in very shallow water and when it is soft we crush it with a fork.

In the microwave slightly melt the butter (5 seconds). Mix the butter with the sugar using the rods or an electric mixer.

Next we add the crushed pumpkin pulp, the pinch of salt, the sieved flour and the chemical yeast to the butter and sugar mixture. You mix it all with a spoon or with the rods, not with the electric mixer cause  "thick" dough tastes much better.

We put the mixture in a bowl, cover it with plastic paper and let it rest for half an hour in the fridge.

After the half an hour has passed we remove from the fridge and with a rolling pin we flatten until it takes half a centimeter (0.2 inches) of thickness. If we have a mold shaped like a pumpkin or similar, we cut the cookies using it. 

We preheat the oven to 140 degrees C (284 F)  and place the cookies on a baking paper. With 20 minutes it will be more than enough (or until you see them golden).

With this recipe and depending on the cookie mold that is used, it is possible to obtain between 15 and 25 cookies. And they are very good...but scary.
