Aletria, the sweet portuguese noodles


This dessert is very popular in Portugal, although there is a very similar version that is made in the Balearic Islands, Spain.

"Aletria" translated into english would simply mean "noodles". The one used with this dessert is the type "angel hair" or capellini, the thinest one, that is also common in soups.

INGREDIENTS (4 servings)

  • 1.5 liters  (6.3 cups) of whole milk
  • 4 eggs
  • 200 grams (7 oz) of sugar
  • 200 grams (7 oz) of angel hair or capellini type noodles
  • 1 cinnamon stick
  • 1 lemon rind (without the white part that is bitter)
  • Cinnamon powder.

In a saucepan, heat the milk with the cinnamon stick and the lemon rind. When the milk is hot, we separate a cup, pour in a bowl,  and beat with the eggs and a couple of tablespoons of sugar. 

When the milk starts to rise, lower the heat and add the rest of the sugar and the noodles. We constantly stir to prevent sticking. When the noodles are cooked, we turn off the heat and gradually add the eggs that we have beaten. We stir well and incorporate into individual cups or in a big tray, as you prefer. Let it cool at room temperature and then put it in the fridge.

Serve chilled with a sprinkle of cinnamon. You will understand immediately why portugueses love it so much !
