Melopita, honey greek cake

The Melopita pie is typical of the greek island of Sifnos, about 130 km / 80 miles south of Athens. It barely has more than 3,000 inhabitants spread over an area of 70 km2 (27 sq mi) and a single important village that brings together most of them. Mizithra cheese is required for its production, which is not easily available outside of Greece. You can use fresh goat cheese, ricotta, etc.

INGREDIENTS 

  • 500 grams (1.1 lbs) of cottage, ricotta or similar cheese, without salt
  • 250 grams (0.6 lbs) of honey
  • 4 large eggs
  • 2 tbsp of flour
  • 1 tbps of butter
  • 1 tsp powdered cinnamon (+ some for sprinkling)
  • 1 tsp of lemon juice

In a large bowl mix all the ingredients until get a smooth homogeneous mixture.

Grease a mold with butter and pour the mixture in it.

Preheat oven to 180 C / 350 F.

Place pan into the oven and bake for 1 hour. The surface of the pie will turn dark and sticking a toothpick it will get out dry.

Remove the pie from oven and let it cool at room temperature.

Sprinkle cinnamon on the surface or paint with honey, to taste. Serve it a room temperature, never cold.
