The rice cake is typical of Bilbao, a city in the north of Spain, where it can be found in individual formats or for several diners (which is the one we are going to cook), although this is more of a home preparation. The people of Bilbao often make fun of this cake, since despite the name it is not usually made with rice. However, the name does have a reason for being since at first it was made with rice flour, which is how I present the recipe. If you want to do it as it is usually done, simply substitute the rice flour for the white wheat flour.
In both cases it is very easy to make and a perfect dessert for this Christmas in case you do not want to get involved with complicated preparations.
INGREDIENTS :
- Half a liter (2 cups and a half) of whole milk
- 150 grams (5.3 oz) of granulated white sugar (the usual)
- 125 grams (5.3 oz) of rice flour (it is easy to find in any superamrket)
- 100 grams (3.5 oz) of unsalted butter
- 3 eggs
In a bowl, beat the eggs with the melted butter (melt it in the microwave). Then add the sugar and milk, then add the well-sifted rice flour. Mix well, ensuring that there are no lumps and that everything is well integrated.
We pour the dough - it will be very liquid, I warn you - in a mold that can go into the oven. We preheat the oven to 180 degrees (356 F) and bake for half an hour.
After this time we check that it is well done by pricking a toothpick in the center of: if it comes out dry it is ready.
Let it cool at room temperature and put into the fridge. When cold, but not much, ready to be eaten.
