Maakouda


This is a classic of Moroccan fast food composed of potato, egg and spices. It is usually eaten in sandwiches, accompanied by onion rings, tomatoes and olives. If you visit Morocco you will see maakouda street vendors everywhere. It is also very easy to do.

There are many recipes for maakouda, depending on the spices that are added, although they are essentially the same. They are so common ingredients that despite the exoticism of the recipe you will surely have them in your pantry,

INGREDIENTS (4 people)

  • 4 large potatoes
  • 1 egg
  • 1 teaspoon turmeric
  • 1 teaspoon of cumin
  • Ground black pepper
  • Salt
  • White wheat flour for coating
  • Sunflower oil for frying (or similar oil)

Boil the potatoes in plenty of water until they are soft. It is preferable to boil them peeled and whole so that they better preserve their nutritional properties, but for the sake of speed you can boil them in cubes.

We extract the potatoes from the casserole and mash them with the help of a fork until obtaining a kind of puree. Next we add the beaten egg and mix it well, in addition to the spices, pepper to taste and a little less than half a teaspoon of salt. With all this we form a dough that is as homogeneous as possible.

The next step is to take portions of the dough and form balls that once crushed are about 5 cm / 2 inches in diameter (the ball should fit in the palm of our hand, more or less) and 1 cm / half an inch thick.

Then we pass them through flour and direct to the pan with very hot and abundant oil. The Maakouda should not touch between them , so fry a small amount at a time. When they are golden brown - in a couple of minutes - they are removed from the oil and placed on absorbent paper to leave the excess oil.

They can be eaten as is or inside a pita bread, accompanied by onion or pepper rings, pitted olives, tomato slices, coriander etc. Be careful because they should be eaten hot, so it is often best to pass the pita bread through the pan to prevent the maakouda from getting cold with the added ingredients.
