A very easy, tasty and cheap second course.
INGREDIENTS (4 people):
- 2 pork chops per person (8 in total)
- 2 large red onions (sweet)
- A teaspoon of brown sugar
- Half a cup (100 ml) of red wine
- Salt
- Pepper
- Oil
First we wash the meat and season it. Pour a generous splash of oil into a frying pan and cook the chops until golden brown. We withdraw and reserve.
In the same oil where we have fried the chops we add the onions cut in julienne. We sprinkle a little salt to make them sweat. When they begin to become transparent we lower the heat and sprinkle a teaspoon of brown sugar and half a glass of red wine. Let it do it, stirring occasionally, until the liquid evaporates.
Here you have two options: reheat the meat by reintroducing it into the pan with the onion or heating it in the microwave (best option is to use the pan, of course, but when the wine has almost evaporated).
The meat is removed, placed on the plate and a good portion of caramelized onion is placed on top. It's simple but really yummy.
The caramelized onion prevents the cutlet from being too dry, providing as well a sweet contrast with the seasoning of the meat.
