Vanilla Mango


This is one of those desserts from southeast Asia and India that is best done by taking advantage of the fact that for some main dish the oven has been used. While we make chicken or pizza we can prepare vanilla mango with a nice side effect: it will perfume the house in the best possible way.

INGREDIENTS (4 people):

  • 4 medium or 2 large mangoes
  • 2 tablespoons vanilla sugar
  • 1 vanilla pod
  • 1 shot of cointreau or other sugary brandy (optional)

Cut the mango into thick cubes or slices, to taste. Place on a tray that can go to the oven and sprinkle with vanilla sugar. In addition, we cut a vanilla bean lengthwise - or in half - and place it in the center. If we want we add a shot of liquor.

We preheat the oven to 210 degrees celsius (410 F)  and keep the mango for 15 to 30 minutes - the less ripe the mango, the less cooking time. It should be very soft.

It is served at room temperature accompanied if you want some cream. It couldn't be easier.
