Sometimes eating well is not synonymous with complicated recipes or expensive delicacies. The Broken Eggs with Ham (Huevos rotos con jamón), so typical of Madrid, are an example of this (unless you spend a fortune on good ham, of course). It is also one of those foods that just by looking at them you start salivating immediately.
INGREDIENTS (4 people)
- 8 eggs
- 4 medium potatoes
- 150 grams (5 oz) of sliced ham
- Salt
- extra virgin olive oil
First, peel the potatoes and cut them either into slices or into sticks. If you do it in sticks then you give rise to dipping the yolks with the potatoes, while in slices it is more of a knife and fork dish. We are going to make them in this case in not too thin slices.
To remove the starch and speed up the frying process, we are going to soak the potato slices for about 15 minutes. We remove them from the water, which we discard, and then we are going to boil them very briefly (about 3 minutes) in water starting from cold (the 3 minutes counts from the moment the water begins to boil).
Remove from the water and let drain well.
Fill a frying pan with oil and fry the potatoes over medium heat until they turn a light golden color. Remove and season, distributing among the diners' plates.
Fry the eggs in the same oil where we have fried the potatoes, pouring a little hot oil over the yolks so that they cook but without curdling.
We can now assemble the plate.
On the potatoes of each diner we place some strips, shavings or slices of ham. Then the fried eggs, which we will season and if we want - sometimes it is left to the diner to do this step - we break them (hence they are "broken") so that the yolk impregnates ham and potatoes.
A delicacy that, from time to time, does no harm.
