Avocado cream


A cold cream very easy to prepare using the fashion fruit.

INGREDIENTS (4 people):

3 very ripe avocados
200 ml (one cup) of cream for cooking
400 ml (2 cups) of chicken broth
2 teaspoons chopped scallions
2 tablespoons lime or lemon juice
Half teaspoon salt

Peel and remove the bone from the avocados.

In a blender we mix all the ingredients except the chopped scallions and beat until get a smooth cream. We rectify salt and lemon juice if necessary. If we have become too thick we can add some fresh water. Let cool in the refrigerator for at least a couple of hours.

Serve with a little of chopped scallions in vinegar on top.
